This lot was produced by 80 small farms at an ideal 1850-2000 msl in the San Jose sub-municipality of Inza, Cauca. After selection, the ripe cherry was pulped, fermented for 48 hours, then sun-dried in parchment on protected raised beds. Once properly dried, the parchment was trucked to quality obsessed Pedro Miguel Echazarria's "Pergamino" mill near Medellin, for expert dry milling and final export preparation.
The Pillimue Family, or logistical operator in the area and crucial members of the community, led a program to certify the 80 family farms in organic practices. This small group of producers have become leaders in innovation, leading workshops in the community on re-using most farm waste and making inexpensive, enriching bio-fertilizers.
